Before this recipe, I had never had or cooked couscous before, but omg! This dish was absolutely delicious, and a nice balance between sweet and savoury. I was able to cook it up in 10 minutes, which is a definite bonus too! Worth trying out seriously!

Makes for easy cooking (and scientific experimentation too!), but this one is a serious treat! I love having granola/muesli on my yoghurt for brekky, but having some apricots entwined is just beautiful… and toasted coconut 😉
